Day 256

It’s the day before Thanksgiving here in the US. I’m not going anywhere, I’m not hosting anyone, I’m not doing any of the things that would normally preoccupy me on the Wednesday before Thanksgiving. But I’m so ready to take a break from the daily grind.

This past Sunday was Pie Day - a family tradition that has endured for decades and which I can’t believe I’ve never written about here before. At its peak of production, my parents, sisters, and I gathered on the Sunday before Thanksgiving to crank out more than two dozen apple pies for our large extended family and to serve on the day - homemade crust made in a washtub by my mother, apples by the bushel peeled and sliced mostly by my father. The tradition itself starts with my mother and her own mother, somewhere around 65 years ago, before any of my generation came along, tackling an American custom and making it their own. 


Last year I spent Pie Day in Boston with my siblings and niblings for the first time in probably 20 years. This year, of course, everything looks different, but we adapted. Most of my Boston sisters gathered in sister S’s backyard to assemble pies in the frosty air, while those of us who were remote zoomed in from possible-exposure self-quarantine (no symptoms so far), Chicago, and metro DC (yours truly). We produced a total of 10 pies across our various locations - all apple, as usual (we’re not pumpkin pie people). 


My pie specs, for anyone who’s interested: a double batch of this amazing pie crust and a dozen Granny Smith apples tossed with sugar, cinnamon, and nutmeg and sprinkled with lemon juice.



And so, come what may (and please let 2020 not have anything left in its arsenal), the holiday season begins.

Global update

home sweet home

Well, it's been a while since I've been around here. I've been updating plenty on Instagram, so if you want a more detailed recap of the last eight (shriek) months, head over there to rovinglemon. A few high points here:

Miss B is thriving and days away from finishing her extra-long stint in eighth grade. Her first-day assessment of her (no longer) new school has been sustained, and she's already looking forward to ninth grade - after an appropriately slothful summer vacation, of course.

DP is also flourishing; busy as always with work, juggling multiple commitments and getting another new program up and running - just the way he likes it.

My work is also pretty full-on. Last year was one of professional as well as personal transition for me: after 19 years with the same global organization I decided it was time for a change, and am now working (still from home) with a much smaller non-profit startup in the same research area. I love the challenges of working in a startup, even on the days when I feel like it's swallowed my life whole and left me no time to think about anything else.

Home is great: moving to metro DC was dictated by DP's job, but we're really enjoying it - feeling settled in the house, getting to know the area, and in a great location for work trips, family visits, and weekends away. Our plan is to give Miss B a good long stretch of staying put, and it's a huge mental relief not only to be able to think about the future with that in mind, but also to look forward to the prospect.

Food is of course what this blog always comes back to, so here are my top five recipes from my blog hiatus:


1. Shortbread This isn't about a specific recipe so much as it is a technique that I finally realized this Christmas: after multiple disappointments with making shortbread, I finally decided to try a throwaway suggestion from an Australian friend: chilling the shortbread dough before cutting and baking it. And I mean really chilling it - at least two hours, and preferably overnight. This did the trick of improving both the shape and the texture of the finished product, and I will now do this with any shortbread recipe I make from now on, whether the recipe mentions or not. (Here's a good one.)



2. Dutch baby I've written about this before, so I won't rehash the recipe; this is really just a reminder to us all of this as a delicious, easy, scalable, and impressive recipe that can be adapted to almost any situation.



3. Hand pies / turnovers / DIY toaster pastries Whatever you call these, they're delicious, and if you make them square, there's almost no dough wastage. Use this Genius Recipe for pie crust, fill with fruit, jam, ganache, Nutella, whatever. For the next batch, I'm going to cut the dough into rectangles and freeze ready for use, so that I can make these to order. Having a batch of six sitting around ready to eat is too dangerous.



4. Whole wheat sliced bread After multiple failed attempts over the years, I've finally got a recipe for whole wheat bread that I really like. The recipe is a mashup of several others, with a few tweaks of my own, plus one key step from here that makes a major difference to rising and texture.

Slow rise whole wheat bread for slicing

250 g/8 oz whole wheat flour
250 g/8 oz bread flour/strong flour
2 g/.5 tsp kosher salt
3 g active dried yeast
300 ml/1.25 cups liquid, comprising roughly equal parts Greek yogurt, milk, and water
15 ml/1 Tbsp canola or vegetable oil
15 ml/1 Tbsp maple syrup

1. Measure flours, salt, and yeast into large bowl.

2. Measure Greek yogurt, milk, and water into microwave-safe measuring jug and heat until just hot enough that you can stick your finger in and keep it there for 10 seconds. (You can also do this on the stove if you don't have a microwave.)

3. Add liquid, oil, and maple syrup to dry ingredients and stir together briefly. Let this stand for about 20 minutes to allow the flour to absorb the liquid.

4. After 20 minutes, continue mixing the dough until fully combined and consistent, then knead by hand until the dough is smooth and springy. You can continue to add flour as you knead, but it should be a little sticky rather than dry.

5. Put dough back in bowl to rise and cover with a cloth. Leave to rise until doubled in bulk; with the smaller amount of yeast used here, this should take a couple of hours. I prefer this because it gives me more schedule flexibility, and develops the flavor of the bread.

6. When the dough has had its first rise, grease and flour a loaf pan. Shape dough into a loaf (there's a good tutorial here on how to do this) and place in the pan. (The cook who provided the standing technique also says: "It's important that the surface of the loaves be stretched taut; this helps them rise and prevents an overly-dense interior.")

7. Let the dough rise a second time until it starts to rise over the edge of the pan; this should take 40-50 minutes. Heat the oven to 425F/220C.

8. Before putting bread in the oven, make a slash down the middle. Bake at 425F/220C for 15 minutes, then lower the heat to 375F/190C and bake for another 30 minutes before testing the bread for doneness.

9. The traditional way of testing bread is color (golden-brown) and sound (hollow), but these days I like to use an inserted thermometer to confirm that the bread's internal temperature is the recommended 190F/88C.

10. Remove loaf from pan and cool completely before slicing.



5. Zoodle carbonara Given the above list, you may not be surprised to read that I've also decided to make a concerted effort to be more mindful about my carb consumption. I've been doing what I call a "Keto-ish" diet for the last couple of months, and this is my go-to low-carb meal these days.

1. Chop up and fry 2 pieces of bacon.

2. While the bacon is frying, turn 1 medium-sized zucchini into noodles. Add these to the pan with the frying bacon.

3. In a small bowl, mix together 1 egg, 2 tablespoons grated pecorino romano, and 8-10 grinds of black pepper.

4. Pour egg mixture in pan and toss to coat everything.

5. Top with more pepper and cheese and serve immediately.

Serves 1. Can be scaled up.

While you wait

Nearly four years ago I wrote a post about how stressful I find waiting, at a time when I found myself in a state of limbo, awaiting significant outcomes over which I had no control in my personal, professional, and national life.

Well, here I am again - and it doesn't feel as though I've gotten any better at being zen about waiting. Possibly even worse, at least at the moment, compounded as it is by grief. My current strategy is something I call "meticulous mindfulness" (or would "mindful meticulousness" be better? I can't decide), by which I mean that I am trying to focus on the things that I want to accomplish each day, and then trying to give each of those things my full attention. In the short term, when I can accomplish it, it stops the hamster wheel in my brain from spinning; and in the long term, I hope it adds up to a period of sustained accomplishment and satisfaction, rather than one of fruitless frustration.

So: this morning, I woke up early for Sunday, slightly jetlagged after returning from my second trip to the US in two months (this one, a family trip, was the one I had been planning to take this year). I lay in bed and thought about what I wanted to do with this unexpected block of time. Did I want to stay in bed and read, enjoying having nothing to do after three weeks of non-stop activity (including stops in five cities)? Or did I want to tackle some task on my monster To Do list?

I split the difference - I read for a while, and then I got up to bring my blog up to date. Here's some recent happenings, aside from what I've already told:

An impromptu family trip to Perth and the southwest corner of Western Australia during July school holidays that almost didn't happen, between DP's travel schedule and my father's hospitalization. But it did, and I'm glad we managed it - as well as this, which was on Miss B's must-see list: sunset over the Indian Ocean. Our last night before we flew back east, we went down to the beach in Fremantle and sat there to watch it happen.

The saying goes that in the midst of life we are in death, but the reverse is also true. My father died five days before Miss B's twelfth birthday, and I flew to Boston the day after. We had a family dinner and cake on the day with a few close friends, and with the help of some of the aforementioned meticulous mindfulness I was able to give Miss B the cake of her twelve-year-old dreams, even if I didn't manage a birthday post.

And to continue the theme: my oldest sister's birthday was the day after my father's funeral, and for my gift I made a birthday dinner, for her and all available family members. For dinner we had spaghetti al'amitriciana three ways: the standard version, as outlined in this post; a batch made with gluten-free pasta, for the GF contingent; and a vegetarian version for the birthday girl, substituting fried halloumi for the bacon. For dessert we had her favorite treat: birthday pie. I tested out Nigella's GF Pie Crust (a smashing success, even made under sub-optimal conditions in someone else's kitchen) and made maple-blueberry for the birthday girl (who doesn't eat refined sugar), and peach-raspberry for the non-blueberry fans.

Another round-up

So I've gone AWOL again and come back again....Here's what I've been up to in the interim:

Went overseas for my organization's annual meeting - 10 jam-packed days in Vienna...

...mostly work, but friend M and I managed to sneak out to a cafe one afternoon and sample two famous Viennese specialities - Sacher torte and apple strudel.

We finished off the conference with a gala dinner in the spectacular Vienna Rathaus...

...and then the next day it was off to Amsterdam to another conference, this one the annual meeting of one of our partners. I had about 3 days there, and one free afternoon which featured a visit to the Van Gogh Museum, a World Cup rugby match in an Irish pub, and a wander through the streets and canals in between.

Then it was off again, for a flying visit to Boston en route to spend a week in western Mass. with my sister-in-law R and brand-new niece Miss D. I fuelled up for my drive with an Australian-style coffee from the cafe in my old neighborhood.

I was gone for nearly 3 weeks - by far my longest solo trip since Miss B arrived more than a decade ago. I got back to Canberra with spring well underway in late October, and snapped this to send back to R and lighten her sleep deprivation with a laugh.

Ten days after I got home, it was DP's turn for a road trip and my turn to keep the house running. Crumpets are a tradition now when DP goes away, and this was the best batch yet - not least because for the first time I made the dough the night before, cutting down on the yeast and stashing it in the fridge to rise slowly over night. In the morning there was no waiting, and the extra time for the dough to develop improved the flavor.

DP came back in late November, and I was off again - but this time just a 2-day hop down the road to Melbourne for our regional symposium. I managed to fit in a morning run around Carlton Gardens and captured some typically changeable Melbourne weather...

...and then it was back home to plunge into prep for Thanksgiving! We pushed our celebration back to Saturday this year to accommodate my trip, so I took Friday off to get my planning and prep organized.

And get my contributions to the desserts sorted: 3 apple pies, one small raspberry pie for Miss B, and this year's experimental pie - smitten kitchen's nutmeg-maple cream (a hit!).

As usual, I didn't manage to take any good pictures during the event itself - we had 35 people for dinner, including the 3 of us, and by all accounts a good time and a major feast was had by all, including yours truly. And I thoroughly enjoyed the post-celebration rituals as well - sleeping in, pie for breakfast, and lounging on the deck enjoying the flowers and swapping stories from the night before.

Aside from Thanksgiving, I've managed to do some regular cooking as well:

This pork larb that I mentioned about a year ago is back in heavy rotation. I don't know if you can read my scribbles, but that's basically the entire recipe - heat some oil and saute some garlic and chili, then tip in about 450g/1lb pork mince and cook. While that's cooking, mix together a sauce of soy, fish sauce, and brown sugar (I use 1 part fish sauce and brown sugar to 2 parts soy). When pork is just about cooked, chuck in a few big handfuls of spinach to wilt in the heat, then mix in the sauce. Serve over rice with a squeeze of lime juice and some chopped spring onion and herbs. (I get the rice going first and the rest of it comes together by the time the rice is cooked.)

Strawberry season is in full swing, and I've been alternating between making strawberry jam and roasted strawberry compote, shown here - basically tossing strawberries with sugar and a splash of balsamic in a baking dish, then putting into a 180C/350F oven for 45-60 minutes. I stir into yogurt, pour over pancakes, and occasionally eat straight out of the jar.

I also tried an experiment with making Russian tea cakes as a slice-and-bake cookie - delicious, but no structural integrity. They basically fell apart as soon as you picked them up. So I'll be sticking with the original shape for upcoming Christmas baking.

And finally, I'm experimenting with cold-brewed coffee - perfect for summer iced coffees and might save a bit of money too on my daily coffee shop habit!

I'd say more, but between these, work, and dinner guests, I'm kind of done for today.

Colonial appropriation

I have cherished an ambition to make my own mince pies ever since I was first introduced to them way back in December 1998, the first year we were living in England. My office Christmas lunch was my initiation to several iconic English Christmas traditions (chipolata sausages served alongside the roast turkey; flaming Christmas pudding; drinking copious amounts of alcohol at an office lunch), but the mince pies was the one that really took hold of me.

Mother's Day

What do you do when you are responsible for organizing the celebration for a holiday that’s supposed to be in your honor?

This was my Mother’s Day dilemma this year. DP is on the road again and, aside from a half-asleep phone call from London at 8am, was out of the equation. Miss B, while generous with hugs and verbal appreciation, doesn’t really have the wherewithal to take charge at this stage of the proceedings. I, caught in the full Nelson of solo parenting and a crushing work deadline, figured adding this on to my To Do list might just send me around the bend.

In this fatalistic frame of mind, I considered my options:

1. Sulk.
2. Ignore the whole thing.
3. Do something nice for myself that wouldn’t drive up my stress levels any further.

Put that way, #3 was the clear winner. And—no surprises here—the something nice for myself was food-related. I finally made myself that apple pie I’ve been craving since last November, and tried to sell my family on just last week. I defrosted the batch of Anxiety-Free Pâte Brisée that had been waiting in my freezer for pie-worthy apples; then all I had to do was prep about eight apples out of the huge box I recently bought at a roadside stand (seasoning them as I went with a pre-made mixture of sugar, cinnamon, nutmeg, cardamom, and ginger, and sprinkling with lemon juice); roll out the crust; assemble, and bake.

It wasn’t as good as my mother’s apple pie (among her many other virtues, my mother makes the best apple pie in the whole wide world), but it was pretty damn good. And a perfect end to a low-key Mother’s Day spent doing all the things mothers usually do.

Pack rat

This recipe is the best reason I can think of for never getting rid of a cookbook ever.*

I bought How to be a Domestic Goddess more than seven years ago. At the time, I had a job that required me to travel an average of two weeks out of every four, and that was when my cookbook collection (not to say problem) really started. I had just moved back to the US, but was often either in the UK on these trips, or else passing through en route to somewhere else. I started picking up cookbooks here and there, reading them as though they were novels as a way to assuage my homesickness and mitigate night after night of eating alone in restaurants. This was one of the first ones I bought, and for me it exemplifies what Laurie Colwin said about cookbooks: that they are distillations of domestic life at a particular place and time. And very comforting at a time when domesticity of any kind was in short supply.

Even though I’ve pored over this cookbook numerous times over the years, I’m not sure I had ever cooked a single thing from it before this month. But I’ve been wanting to make this recipe ever since the first time I cracked the spine; in fact, as soon as I chose it for the Cookbook Challenge, I thought, “Now I’m finally going to make that bacon and egg pie.”

* In the mental health field, this is known as rationalization—finding post hoc reasons to justify otherwise inexplicable actions.


NL's Boxing Day Egg-and-Bacon Pie
So called because it is NL's preferred Boxing Day supper; obviously you don't have to wait until then to make it. I fiddled with the filling proportions, as the original recipe was practically all bacon and hardly any egg. It was delicious like this, but next time I make it, I might lower the bacon by another 100g and add yet another egg.

Pastry
I used this recipe for Anxiety-Free Piecrust; or substitute your own favorite

Filling
400g/1lb (streaky) bacon, cut into thin strips
1 medium onion, chopped
Freshly ground black pepper
1 scallion, chopped
2 Tbsp chopped basil**
3 large eggs

Make the pastry ahead of time, so it’s had time to rest by the time you are ready to put the pie together.

Preheat the oven to 200C/400F.

Fry the bacon and onion together, seasoning liberally with pepper. Mix the remaining ingredients together thoroughly and set aside.

Roll out both halves of the pastry dough to fit your pie dish of choice; line the dish with one, and set the other aside. Dump the bacon and onions into the pie shell, then pour over the egg mixture. Cover with the pastry lid, trim both, and fold over and pinch the overhang to seal the pie. Cut steam vents in the top and bake for 30 minutes.

Cool on a wire rack. NL recommends serving it cold or about room temperature, but we ate it hot and it was good that way too.

Serves 6.

** The original recipe called for parsley, but I’m not a big parsley fan and I never have any on hand. I do, however, have three basil plants on my balcony.
